Debuting Akasha in April this year with the amazingly good Freshwater Pale Ale (5.2%), Dave is about to open his new brewery in Sydney having been turning out the Akasha beers from the Rocks Brewery.

The man that started his brewing career at Riverside Brewing Co. set some time from his busy schedule to answer our Ten Questions;

1. What was your first brew?
My very first brew as a ‘home brewer’ was a Tooheys kit and kilo brew about 23 years ago! My first professional brew was the 77 IPA still in production at Riverside

2. How did you get this job?
I couldn’t get a job as a professional brewer, so had to start my own brewery to get a job!

3. What’s your favourite beer that you have brewed?
The 777 IIPA I brewed at Riverside was the result of many years of drinking and brewing IPA’s and one of the few beers that I could say I was happy with from the first couple of batches. One of my favourite styles is the American Amber Ale, and the Fire Within we have brewed at Akasha is a cracker!

4. What’s your favourite beer brewed by others?
Again a tough one to answer with just one beer! Little Creatures Pale will always hold a special place in my beer drinking journey…but Russian River Beatification and New Belgium Lips of Faith – Sour Brown are both massive beer moments for me.

5. Which beer would you like to brew?
By the end of my brewing career I’d love to think I brewed most if not all beer styles…but right now I am busting to brew a new IIPA that will be brewed once our new system is up and running.

6. What name would you really like to give to a beer, and what type of beer would it be?
I am absolutely shit at naming beers so rely heavily on Benny Galanos (Akasha Sales Manager) to help me out! Look out for something later this year that is hoppy (surprise, surprise) and a questionable name :-)

7. What’s your favourite beer style?
IIPA and Sours. Both very hard to brew well, but when they are there is nothing better.

8. What’s your favourite hop variety?
I am obviously a massive fan of American hop varieties – I couldn’t live without Cascade, Simcoe and Amarillo

9. What’s your favourite malt variety?
I have been in love with all the Gladfield malts (NZ) for a little while now. I could sit down and eat a bowl of medium crystal for breakfast each morning :-) so fresh and crunchy it is just delicious. It doesn’t have the over the top sweetness that you can get from Australian and English crystals. Do yourself a favour and track it down.

10. Which do you prefer – draught, bottle or cans?
As a brewer of mostly hop-forward styles – draft is always the best representation of my beers. Smaller packaging however is a necessary evil and whilst I love the concept of cans, I still lean towards the bottle for longer term packaging.

Technical Details of Brewery plant

We are currently brewing all of our beers at Rocks Brewing Co. on a 20HL HEBS system.

Our own system which is being installed as we speak is a 4 vessel, 12HL system (Mash, lauter, kettle, whirlpool)
